KITCHIT: WHAT IS THE ONE KITCHEN TOOL (OTHER THAN A GOOD CHEF'S KNIFE) THAT YOU CAN'T LIVE WITHOUT?
JOSHUA CLEVER: Citrus juicer and microplane
WHERE CAN YOU BE FOUND/WHAT ARE YOU DOING ON YOUR DAYS OFF?
Even on my days off, I am most likely shopping for something at the farmers' market. If I'm not doing something food related, then I am usually in Dolores Park with friends having a picnic, cycling in Marin, or sweating it out in a vinyasa yoga class...
DESCRIBE YOUR IDEAL DINNER PARTY OR EVENT:
Great food, good wine, and lots of laughter...
WHAT DO YOU LOVE MOST ABOUT BEING A CHEF?
I love the actual cooking process, but being in the experience and seeing and sharing the pleasure of food - it simply brings everyone together!
WHAT IS YOUR SIGNATURE DISH?
Rosemary-cumin lamb tenderloin, citrus-braised greens, and root vegetable horseradish mash
DESCRIBE YOUR MOST MEMORABLE MEAL:
Alain Ducasse's restaurant in the Plaza Athénée, Paris; decadence is the only word to describe it.
MY CULINARY IDOL OR ROLE MODEL IS:
I don't usually follow celebrity chefs, but if I had to choose it would be Jamie Oliver. His food is simple and creative, just how I like to cook.
I KNEW THAT I WANTED TO BE A CHEF WHEN:
I was five or so and got caught "improving" Grandma's chili with every spice in the cupboard, including cinnamon. My palate has improved, but my creative ideas continue on.
MY FAVORITE RESTAURANT IS:
Bar Tartine; innovative and always delicious.
THE FIRST DISH I EVER LEARNED TO COOK WAS:
Macaroni & cheese with green beans; my mother's favorite meal to this day
MY BEVERAGE OF CHOICE IS:
On the clock, kombucha; and off the clock, a tasty glass of red wine!
FIVE INGREDIENTS I ALWAYS HAVE ON HAND ARE:
A quality olive oil, fresh herbs, citrus, fleur de sel (French sea salt), and fresh ground black pepper
MY FAVORITE FOOD CITY IS:
Even after living in Paris for five years, San Francisco is without a doubt my favorite food city.
WHERE WOULD YOU LIKE TO TAKE YOUR NEXT VACATION?
MY "GUILTY PLEASURE" FOOD IS:
Whole cream and bacon
WHEN I'M AT HOME AND COOKING JUST FOR MYSELF, I MAKE:
I don't like cooking for myself. But if I must, it's usually just an open-face grilled cheese with either hummus or pesto and fresh tomato.
MY FAVORITE PERSON/PEOPLE TO COOK FOR IS/ARE:
My friends and family because I get to be a part of the whole experience, but generally anyone that enjoys food.
MY FAVORITE SEASON FOR COOKING
We're lucky to have year-round growing seasons in Northern California, but if I had to choose I would narrow it down to two: spring for sweet peas and fava beans and summer for heirloom tomatoes.
MY FAVORITE ICE CREAM FLAVOR IS:
This summer I was making a lot of homemade ice creams: fennel, lavender, ginger, salted caramel, and lemon verbena were on repeat. I think they're all my favorite.
MY FAVORITE COOKBOOK IS:
Mine of course... no seriously, I don't use cookbooks often, but I have been known to find inspiration from Jamie Oliver's "Jamie's Italy."
WHAT IS ONE FOOD OR DISH THAT YOU WOULD HAPPILY EAT EVERY SINGLE DAY?
Two perfectly poached eggs with a quality olive oil, fresh ground black pepper, smoked sea salt, and miso braised kale. What can I say? I love my greens...
THE DISH THAT MY MOTHER/GRANDMOTHER WILL ALWAYS MAKE BEST IS:
My mother's meatloaf is still better than mine!
TWO EGGS "MY WAY" ARE:
THE FIVE SPICES/HERBS I TEND TO USE MOST ARE:
For spices I tend to use cumin seeds, fennel seeds, and cayenne...and for herbs, fresh rosemary, thyme, cilantro, and tarragon.
YOU'VE JUST BEEN OFFERED YOUR OWN TELEVISION SHOW. DESCRIBE IT:
Country-chic: fresh, seasonal, family-style meals with a healthy twist.
MY FAVORITE LOCAL ARTISAN FOOD PRODUCT IS:
Ooooh, in the Bay Area this is a hard question to answer. I love all of Cowgirl Creamery's cheeses, especially their Red Hawk. I'm also a big fan of anything from Della Fattoria's bread booth on Saturday morning at the Ferry Building Farmers Market. And even though Blue Bottle Coffee has exploded in the last couple of years, I still have a soft spot for any beans that they roast.
MY FAVORITE LOCAL PRODUCE ITEM IS:
Kale! Especially because we can grow it year-round.
MY FAVORITE BREAKFAST CEREAL IS:
My homemade pistachio cranberry granola
WHAT IS THE ONE FOOD OR FOOD GROUP YOU COULDN'T LIVE WITHOUT?
I wouldn't want to live without kale, or any leafy greens for that matter.
ONE FOOD THAT I'LL AVOID AT ALL COSTS IS:
Anything processed if I can help it; my general rule is to avoid products with more than five ingredients.
