KITCHIT:  WHAT IS THE ONE KITCHEN TOOL (OTHER THAN A GOOD CHEF'S KNIFE) THAT YOU CAN'T LIVE WITHOUT?
LUIS LAGOS:  The Blender. Believe it or not... I cooked two years in a kitchen without electricity. I made everything by hand and learned modern appliances are uh... handy.
WHERE CAN YOU BE FOUND/WHAT ARE YOU DOING ON YOUR DAYS OFF?
Definitely with friends. We have cooked a joint effort experimental meal. We are full and enjoying great conversation.

The host is the guest and the guests cook. Everyone is relaxed, laughing and having a great time.

The opportunity to share something I made, something I love with others. Food on the table brings people together, forms community often resulting in an exchange of ideas. Some good. Some uneatable.

DESCRIBE YOUR MOST MEMORABLE MEAL:
1998 Madrid "Casa Lucio" I had never before, or since, eaten so much amazing food. A five hour meal, delicious dishes, wine, excellent company and conversation. Lenguado, huevo rotos, jabugo, paella, cochinillo, padron peppers... and more. Unbelievably, we ate almost every item on the menu. Sarcastically, the waiter asked if we would like desert. He could not fathom we could eat any more. The answer was "yes". "Three of each please."
MY CULINARY IDOL OR ROLE MODEL IS:
My grandmother. She would cook for three or four days non stop. Not just for holidays but even for a casual Sunday family lunch.

I booked chef Luis to cook a dinner at a house up in Napa for a bachelorette party this past weekend. It was awesome! Luis arrived right when he said he would and basically started cooking right away. He was also very happy to let a couple of the girls help out with the cooking, as they wanted to learn how to make what he was cooking for dinner. Luis was very personable and easy going, and the food was fantastic! Everyone at the dinner had a great meal and a great time, and I would definitely recommend chef Luis to anyone looking to hire a chef for an event!

Chef Luis did an amazing job for our company retreat this weekend up in Tahoe! Rave reviews from everyone on how amazing the food was. Couldn't get enough of his special margaritas!! We had the most wonderful dinner with Chef Lagos! We bought this for our parents and grandmother as a Christmas gift. It was the perfect gift! The meal was absolutely delicious. We asked for a substitution on the appetizer (since I can't eat blue cheese), and Chef Lagos came up with the tastiest tomato and burrata cheese bruschetta. The green peppercorn steak was cooked perfectly, and the sauce was amazing. Chef Lagos is the sweetest man who graciously talked with us after our dinner for several minutes. We would highly recommend this to our friends. It was the perfect night, and we loved Chef Lagos!!

Chef Luis prepared an amazing lunch with many courses, all of which were wonderful. Highlights included the crab martini, tuna tostadas and mushroom empanadas. He is a fabulous chef and we will definitely look to hire him again.

Chef Luis Lagos was amazing. Seriously the best meal I've had. All the guests were happy, as were we (which was a big plus, considering our guests are quite the food connoisseurs, working for a tech company that serves chef-prepared meals daily). We especially enjoyed the appetizers - the marinated mozzarella and basque squid rings were to die for. On top of the delicious food, Chef Luis was great to work with. Very professional, kind, and flexible. I truly hope to work with him again.

We had Luis cook for 32 people for our 1 year-old's birthday party - this is really just an excuse for the adults to get together! The food was excellent - we asked for a more relaxed "back-yard grill" menu and he did his signature appetizers and specialty sliders (chicken, pork, and beef). All our guest were impressed with Luis and raved about the food. Luis and his assistant handled everything - cooking, cleaning, and part-time bar-tending (when they weren't preparing the food). Would recommend to anyone.

Chef Luis and his assistant Danny turned our 9th annual Harvest Dinner into a culinary delight. I appreciated his prompt response to my emails and we only changed his initially proposed menu once and it was perfect. I requested his signature Chile Rellenos to be featured on the menu and I was so glad I did. The other outstanding items were the oysters, ahi tostadas, tomato soup, the fantastic chocolate cake, and cheese selection. (Okay maybe that is most everything) The buzz in the air was loud and delightful, a guest licked the bowl when the tomato soup was gone, and my gluten free guest was impressed at the special effort made for her. After nine years of the Harvest Dinner tradition and with some serious foodies in the crowd, I have no hesitation declaring a food crush on Chef Luis. Wonderful.

We hired Luis for a friend's 40th birthday party and he did NOT disappoint. I asked him to change a few of the courses and he did so without any hassle and for the same price. Every dish he cooked was full of flavors and many guests commented that it was one of the best meals they had in a long time. And to top it all off, he made more than enough so that we had plenty of leftovers for the next day. I highly recommend the carrot dip and seafood/chorizo paella.

Luis was an absolute delight to work with. He was flexible, creative, and open to menu suggestions during the planning phase for a bachelorette dinner I was throwing in wine country. For the actual event he arrived right on time and prepared food that was exquisitely executed, delicious, and beautiful to look at. He was warm, friendly, and left the kitchen in mint condition. The end of the evening was spent with five women holding spoons and hovered around a bowl of his raw chocolate mousse. I could not recommend this chef more highly. He is a gem.

Chef Jose was excellent- he was retained under extremely short notice and produced a lovely meal with almost no time and very little input! Highly recommend- he brought freshly made margaritas and prepared delicious guacamole, grilled fish and warm flan for a small group of adults and teens.

Luis was fantastic. He was a great fit for our group. My fiancee and I were looking for a creative way to introduce our parents for the first time, and he created a cooking class with "teams" that made the experience fun and festive...everyone is still talking about it. He is personable and warm, and adapted to everyone's food likes and dislikes. Hire him for your event, you won't be sorry!

Chef Luis was very professional and prepared a very delicious meal for us. He was very communicative over email and flexible with menu changes. We had oysters, duck confit tacos, paella, and flan. Next time, I would ask Chef Luis to describe and explain the dishes in more detail as they were being served. Overall, it was a lovely experience and I would recommend him to others.

Luis was excellent. We worked together on several menu iterations and settled on a family-style menu with both Mexican (his heritage) and California (we were in wine country) influences. This dinner was a surprise dinner for 8 for my boyfriend's 30th birthday, so stakes were high! And Luis lived up to them wonderfully. Everyone was very impressed with the food and the only reason we had any leftovers was because the portions were so generous. I would happily hire Luis again, especially given his talent with authentic Mexican cuisine and his generous hand with the spicy seasonings!

Chef Luis prepared an absolutely delicious meal for the 6 of us. The cheese course was amazing, the Ceasar salad was excellent and the salmon was incredible! One of the guests said it was one of the best dinners he has ever had. Chef Luis was very responsive and happily accommodated some special dietary requests. The food was presented beautifully and there were enough leftovers for my husband and I to enjoy for the next 2 days. We will definitely be booking another event with Chef Luis!

Fantastic. Luis was great during the menu planning, flexible and responsive when headcount changed from 16 to 21 the day of the event, his staff was great, and he took all the hassle out of hosting an event. He and his team were helpful beyond the kitchen as well, offering assistance with cleaning, moving furniture, and setting up decor. The food was a huge success and the evening was one to remember. Rockstar performance.

Chef Luis was exceptional. He was warm and engaging and the food was terrific. He was a true pleasure to be around and used super fresh ingredients and we all had a fabulous time. He responded to all of my requests in such a kind manner and never made me feel like I was a pain. He really wanted it to be perfect for us which makes such a difference. Luis was awesome! He planned and carried out an excellent 14 person dinner with amazing and delicious food. The menu planning process was seamless and Luis was able to craft a great Spanish/Mexican style tapas menu that met all our satisfaction. Upon arriving Luis was extremely pleasant tand nice to talk with and very organized, jumping straight into prepping for the event. He put out some chips and dip to start and at first glance one of the dips looked like a peculiar cheesy nacho dip, but under closer inspection and many tastes, we discovered that is was a steamed carrot dip with olive oil and spices; SO GOOD! Luis was also very accommodating, when he discovered that one of the guests was vegetarian during the middle of the meal, he was able to quickly improvise and supply her with soem tasty meat free options. I highly recommend Luis for your next dinner. His food is deep with flavor and he is fun to have around.
