The Governor comes to Chicago
For one night only, the hottest chefs in Brooklyn are coming to Chicago for a collaborative dinner with our own Johnny Clark and Beverly Kim.

ABOUT GOVERNOR

Helmed by Noma and Per Se alum Bradford McDonald, Brooklyn's Governor restaurant showcases fresh, simple ingredients alongside creative culinary techniques, making the menu simultaneously familiar and progressive. Since opening in July, Governor has seen a meteoritic rise to hottest-table-in-town status, following a glowing review from the New York Times, among many others.

Sadly, all that momentum changed on October 29, when Hurricane Sandy delivered four feet of water into Governor's kitchen. Now, they're doing everything they can to get back on their feet. Momofuku and Eleven Madison Park have already hosted fundraisers. And now the Governor team is taking their show on the road to spread awareness and raise funds to rebuild.

THE MENU

Fittingly, the meal starts with an homage to the ocean (oysters poached in a lobster roe emulsion on toast) as well as one of chef McDonald's signature combinations of flavors (trout roe on nasturtium leaves, with a touch of buttermilk...sour, sweet, salt and spice in one bite).

The first course continues the theme of marrying under appreciated and overlooked ingredients in a satisfying, interesting fashion (charred cardoons with mackerel sauce, horseradish and meyer lemon).

The second course is a duet. First: a composition of celery root and preserved egg yolks with an aerated clothbound cheddar cream. Alongside: whole roasted foie gras, with beets, cocoa and brioche.

The main dish is split as well: a 36-hour braised and lacquered beef tongue, cabbage melted in buttermilk whey, with crispy elements is the chef's approach to a rich beef and cabbage set, playing on varying degrees of sour and complexity of texture. Alongside the beef will be trout with crispy garlic, roasted kale a sauce of tapioca and nuac cham, featuring the sharp punch of lime and cilantro.

For dessert, the chefs have collaborated on a black strap molasses cake with cultured cream and calamansi lime.

Red Hook Winery, also damaged by Sandy, will serve pairings (included in the ticket)

ABOUT THE EVENT
With some help from Kitchit, Governor is moving from the banks of New York Harbor to the banks of Lake Michigan. They will be collaborating with Chicago's own Beverly Kim and Johnny Clark to create an original menu that showcases chef McDonald's signature cuisine. Cocktails, dinner, and an after party will be held at the historic Jane Addams Hull-House Museum.
